		<title>A Time to Begin&#8230;a Time to End</title>

			<content:encoded><![CDATA[<p>As I close out 2011 and reflect on the past year, I am amazed in a new way of the love and faithfulness of my Heavenly Father. He has provided and sustained us through the passing of my beloved father and reminded us of the brevity and uncertainty of life. We moved from our tiny apartment into our home and our children and grandchildren continue to bless our lives. Although I have continued to blog sporadically, I have found that the care and upkeep of a home and small acreage is much more time consuming. I began my Sweet Basil Kitchen blog while living in tiny cramped quarters and enjoyed the challenge of preparing healthy meals without any perks of a large modern kitchen. The time spent photographing and writing the blog was fun and yet time consuming. I had no intentions of building a business or attracting hundreds of followers, it was just a way to record my recipes for myself and our children. I hope to keep the blog online, although it will no longer stay active. A special thank-you to each of you who encouraged me with your comments…the 18 months of recording the happenings in my kitchen was great fun! God’s blessings to you all!</p>

			<content:encoded><![CDATA[<p>Sweet Basil Kitchen is kicking out a lot of soup these days! We both love soup with a side of a muffin or crusty bread and a green salad. Today’s recipe is an old tried and true family favorite. My dad perfected this recipe and we are enjoying it today in honor of him! This preparation starts the night before when you soak your beans. I use the small white beans.</p>

<p>The next morning drain and rinse the beans. Gather the following ingredients…celery, onion, carrot, thyme and parsley…</p>

<p>Add the chopped veggies and thyme to the drained beans (about 4 –5 cups). Add 1/4 c. ham base and 6 cups of water. Dice 1-2 c. of ham and add to the pot.</p>

<p>As the soup begins to boil, skim the foam from the top. (this will help with intestinal gas!)</p>

<p>Simmer until beans are tender, about 1 hour. Season with salt and pepper. Using a potato masher, give it about 6-8 good mashes. This will smash some of the beans which will in turn thicken your soup.</p>
<p>Garnish with chopped parsley.</p>

<p><strong>Ham &amp; Bean Soup</strong></p>
<p>1 medium onion, chopped<br />
2 stalks celery, chopped<br />
2 carrots, chopped<br />
2 T. parsley, chopped<br />
1-2 T. chopped fresh thyme<br />
1/4 c. ham base<br />
4-5 c. soaked beans<br />
6 c. water<br />
Salt and pepper to taste</p>
<p>Add all ingredients into a large soup pot. (except parsley, save that for garnish) Bring to boil, skim foam from top, reduce heat and simmer until beans are tender. (about an hour) Using a potato masher, give the soup about 6-8 good smashes. This will mash some of the beans which will in turn thicken the soup. Garnish with chopped fresh parsley.</p>

<p>As most soups, this is even better the next day. This soup will also freeze beautifully.</p>

			<content:encoded><![CDATA[<p>Quinoa is my new favorite food! It boasts the most protein of any grain, is a great source of vitamins &amp; minerals &#8211; iron, magnesium, Vit E, potassium, amino acids and fiber which makes it ideal for vegetarian or vegan diets. It is simple to cook, much like rice and takes 15 minutes from start to finish. When I prepare a pan of quinoa, I usually make a large amount and then freeze it in one cup increments for various recipes.</p>
<p>My honey loves meatloaf, and often orders it in a restaurant. I, on the other hand, am highly suspicious of ordering meatloaf not knowing what all is hidden in the mix! When I first made this recipe, I was skeptical of the outcome, figuring my honey would moan and groan. However, both he and I love it and have made it several times since! It is even better made into meatloaf sandwiches the following day!</p>
<p>I have the Whole Food app on my iPhone and came across this wonderful recipe! Thank-you Whole Foods…although I wished you lived closer!</p>
<p>Start by sautéing one medium chopped onion and 1/4 c. chopped bell pepper in 2 T. olive oil.</p>

<p>Add 8oz. of chopped button mushrooms. Sauté until tender, seasoning with salt and pepper to taste.</p>

<p>While veggies are sautéing, add 1 (15oz) rinsed and drained garbanzo beans, 1/2 c. water or vegetable stock and 3/4 c. rolled oats to food processor and process until almost smooth.</p>

<p>Add 1 c.. frozen peas to veggies mixture and stir until thawed.</p>

<p>Finely chop 3 T. parsley, 1 T. thyme and 10 sun-dried tomatoes.</p>

<p>Add to veggie mixture until heated through.</p>

<p>Add veggie mixture to quinoa and oat mixture, stirring until completely mixed. Place in oiled loaf pan and bake in 350 oven for 60 minutes. Remove from heat and let set 5-10 minutes before slicing loaf.</p>

<p>While loaf is in oven, prepare a mixture of equal parts of apricot fruit spread and soy sauce. Whisk together.</p>

<p>I served this over a bed of spinach with a side of bake sweet potato fries, with a little of the apricot sauce drizzled over all of it.</p>

<p>This is a hearty loaf and trust me, you will not miss the meat! The flavors are amazing and it makes an attractive plate presentation. If you don’t like peas, you could substitute with more chopped bell peppers. The garbanzo beans adds the glue that keeps this loaf together. I think next time I will add a clove of minced garlic.</p>

<p><strong>Quinoa Loaf with Mushrooms and Peas</strong></p>
<p>2 T. extra virgin olive oil, plus more for greasing<br />
1 med. onion, chopped<br />
1/2 c. bell pepper, chopped<br />
8 ounces button mushrooms, sliced<br />
Salt and ground black pepper to taste<br />
1 (15-ounce) can no-salt-added garbanzo beans, rinsed and drained<br />
3/4 c. rolled oats<br />
2 c. cooked quinoa<br />
1/2 c. water or vegetable stock<br />
1 c. frozen green peas<br />
3 T. chopped fresh parsley<br />
1 T. minced fresh thyme<br />
10 sundried tomatoes, chopped<br />
1 cup (about 1 onion) chopped red onion</p>
<h6><span style="font-size: small;">Preheat oven to 350°F. Lightly grease an 8-inch loaf pan with oil; set aside. Heat oil in a large skillet over medium-high heat. Add mushrooms, onion, pepper, salt and pepper and cook, stirring occasionally, until mushrooms are golden brown, 6 to 8 minutes.<br />
Meanwhile, put beans, oats and 1/2 cup water into a food processor and pulse until almost smooth. In a large bowl, combine veggies and bean mixture. Transfer mixture to prepared loaf pan, gently pressing down and mounding it in the middle. Bake until firm and golden brown, 1  hour. Set aside to let rest for 10 minutes before slicing and serving.</span></h6>

<p><i></i>
<p>I confess, I don’t like to be controlled…I would much rather be the one in control. My human nature thinks I know best. Today we read about the love of Christ controlling a person. This is a picture of the love of Christ grabbing hold of someone; holding them firm and strong. When this love captures our heart, we live with an eternal perspective. It means that this world holds a dim view in light of eternity.
<p><i>“For the love of Christ <strong>controls</strong> us, having concluded this, that one died for all, therefore all died; and He died for all, so that they who live might no longer live for themselves, but for Him who died and rose again on their behalf. Therefore from now on, we recognize no one according to the flesh; even though we have know Christ according to the flesh, yet now we know Him in this way no longer.” 2 Corinthians 5:14-16</i>
<p>I know when I am famished I have a single-minded focus to satisfy my hunger. I am compelled to find food! Whatever it is that directs our actions is that very thing which also controls us. Our love for Christ should compel us to bring glory to God. Of what value is a belief in Christ if it doesn&#8217;t so compel a person to live as Christ lived? The love of Christ not only constrains us, it enables us to love and obey the Bible. That love causes us to understand that all of His commandments are imposed for our own good.
<p>The love of Christ gives us the motivation and the strength to do the things that we need to do in order to be pleasing to God. We could not do it on our own. Our own personal determination and willpower is not enough. The love of Christ in the life of a believer is at work in us, renewing us day by day. It is only when we are inspired and strengthened by the love of Christ that we find the strength to live as God would have us live.
<p>The compulsion of the love of Christ should be the driving force in a Christian’s life; a compulsion to tell others of our faith and a conviction to live out that faith. When we grasp the amazing love of God for&nbsp; sinners like us, the only reasonable response is to share it with others. When the love of Christ dominates us, we are going to have a heart that He has. It is not fear that constrains us, or “hems us in” but His love toward us!
<p>When you are constrained by the love of Christ, it will move you to respond to the needs of the people around you. It thrusts you into action without stopping to rationalize. The constraining love of Christ will keep us away from what Satan seeks to ensnare us in and motivates us to act with His love and compassion.

			<content:encoded><![CDATA[<p>Need a quick, but hot hearty sandwich? What about a panini? Check out my blog today for a few easy steps to sandwich happiness! I am always looking for ways to eat more vegetables and less meat and today’s panini fit the bill perfectly.</p>
<p>Several years ago I received a panini grill for Christmas. While we lived in our small apartment, my panini grill was packed away, so once moved, I resurrected one of my favorite kitchen toys! They work by pressing the sandwich between two heated grills connected by a hinge. This allows both sides to be cooked at the same time. You can also use your Panini grill to grill vegetables, such as long slices of zucchini and peppers.</p>
<p>I chose spinach, bell peppers and mushrooms for the vegetables along with some grated organic cheddar cheese. I always buy organic spinach and if possible bell peppers. (depending on price and availability in the supermarket)</p>

<p>I keep sprouted whole grain bread in my freezer. This is considered a live food product with no sugar and no flour. Read about this amazing bread <a href="http://www.foodforlife.com/" target="_blank">here</a>. Instead of mayo or butter, I mixed up equal portions of apricot jam (fruit sweetened) and Dijon mustard. Spread a small amount on the inside of each bread slice. Layer the veggies and cheese on the bread. If you have previously roasted or grilled veggies, it works better, but I sliced my peppers and mushrooms thin and they cooked up fine…with that little crunch that I adore!</p>

			<content:encoded><![CDATA[<p>Recently our large extended family celebrated an early Christmas. Every family brings a favorite plate of goodies which results in an array of candies, cookies, chips and dips. Since a number of us try to eat as natural as possible, I wanted to bring something that was nutritious as well as festive. Our local supermarket has had beautiful and reasonably priced pomegranates the past few weeks. While they are in season, I keep a half a dozen or so on hand.  The amazing little seeds, or arils inside pomegranates  are perfectly suited for juicing or eating whole on salads, yogurt, or as a topping on any other food you love. They are delicious, tangy, and light up your taste buds when you eat them.</p>
<p>I peel my pomegranates in a large bowl of cold water. If I work under the water, it doesn’t splash and pomegranate juice stains miserably! Each fruit will yield hundreds of beautiful arils!</p>

<p>Place 1 1/2 c. yogurt and 1 1/2 c. cottage cheese in blender. Add 1/2 c. coconut nectar, 2 t. vanilla and 1 dropper full of berry stevia. Blend until smooth. (Order berry stevia <a href="http://www.amazon.com/SweetLeaf-Berry-Liquid-Stevia-Bottles/dp/B002AQLOAM" target="_blank">here</a>)</p>

			<content:encoded><![CDATA[<p>We have the fantastic advantage to buy free range chickens from Growing In Grace farms, near our home. This is the same place we got our CSA baskets this past summer &amp; fall. Once you have tasted these chickens, you will never ever want a store bought chicken again. As you can see these chickens have a more yellow fat from the grass that was consumed, similar to the darker yolk color of pasture raised eggs. The fat in cooked chicken broth is also noticeably more yellow. While you get the amazing flavor of this meat, what you don&#8217;t get is a chicken that was raised breathing fecal dust and ammonia in a conventional chicken house 24/7 its entire life. The chicken will not have received any antibiotics, vaccinations, growth stimulators, genetically modified grains, pesticide laden and chemically produced feed, synthetic vitamins or feed ingredients, or arsenic to be passed on to you. </p>

<p>Sauté veggies in 3 T. olive oil until tender.</p>

<p>Bring to boil, cover and reduce heat, stirring occasionally until potatoes are tender. (not mushy)</p>

<p>Slice 8oz. of turkey bacon into bite size pieces and brown over medium high heat.</p>

<p>Add 1-2 c. of milk. (I used 2%) If  you like a thicker soup, whisk 1/4 c. of flour into the milk. Return to boil, stirring constantly. Remove from heat and add bacon.</p>

<p><strong>Sweet Potato &amp; Red Potato Chowder with Turkey Bacon</strong></p>
<p>1 medium onion, chopped<br />
1 bell pepper, chopped (I used yellow)<br />
3 stalks celery, chopped<br />
3 T. olive oil<br />
1 carton organic chicken broth<br />
1/2-1 c. water<br />
1/3 c. flour<br />
5 large red potatoes<br />
1 large sweet potato<br />
2 T. fresh parsley, chopped<br />
1 T. fresh thyme leaves<br />
1-2 c. milk<br />
8oz. turkey bacon, bite size pieces, browned</p>
<p>Chop veggies and sauté in 3 T. olive oil. Add herbs and salt and pepper to taste. When veggies are tender, stir in 1/3 c. flour. Continue stirring over medium high heat for a   minute or two. This toasts the flour and gives better flavor.Add chicken broth, water and diced potatoes. Bring to boil and cook until tender. Add milk (with a little flour whisked in if you desire a thicker soup) and bring to boil, stirring constantly. Remove from heat, add turkey bacon and garnish each bowl with chopped scallions and grated cheddar cheese.</p>

			<content:encoded><![CDATA[<p>There is a fantastic restaurant about an hour from our home, called Landmark Cafe &amp; Creperie, in Galesburg, Illinois. I know people who plan a trip to visit to the Landmark simply to order and enjoy their amazing spinach bisque soup! A few weeks ago we ate there and although I didn’t  order it, I had a few spoonfuls of my honey’s, all the while trying to determine what was in this amazingly delicious soup. My attempt at this bisque is what I consider beginners luck, because it honestly taste almost as good.</p>
<p>Begin with ingredients of onion, celery, red bell pepper, frozen spinach, milk, parmesan  and cheddar cheese, nutmeg, salt and pepper. You will see how you will easily get your daily quota of veggies in this soup!</p>

<p>Chop one medium onion, 2 stalks of celery and one red bell pepper.</p>

<p>Grate 1/4 c. each of cheddar and parmesan cheese. Whisk 1/2 c. flour and 1/4 t. grated nutmeg into milk and measure 1 c. of chicken broth.</p>

<p>Sauté veggies in 3 T. olive oil until tender.</p>

<p>Add spinach and chicken broth into pan with veggies, heat throughout until spinach is thawed.</p>

<p>Puree in small batches in blender. Return to heat, bring to boil and add flour/milk mixture. Stir until thickened and then stir in cheeses. Salt and pepper to taste.</p>

<p><strong>Spinach Bisque Soup</strong></p>
<p>1 medium onion, chopped<br />
1 red bell pepper, chopped<br />
2 stalks celery, chopped<br />
3 T. olive oil<br />
1/2 c. flour<br />
2  c.  milk<br />
1/4 c. shredded cheddar cheese<br />
1/4 c. parmesan cheese, grated<br />
1/4 tsp. nutmeg<br />
1 c. chicken broth<br />
Salt &amp; pepper to taste<br />
2 (10 oz.) pkgs. frozen chopped spinach, partially thawed</p>
<p>Sauté veggies in oil until tender. Add spinach and chicken broth, heat until spinach is thawed.  Place in blender (not all at once, you don’t want to fill your blender more than half full) and blend until almost pureed. Return to pan on stove, bring back to boil. Whisk flour &amp; nutmeg into milk. Add to boiling mixture and stir until thickened. Add cheese and stir until melted.  Serve with a sprinkling of grated Parmesan cheese and a few diced red peppers.</p>

			<content:encoded><![CDATA[<p><strong>The Most Amazing Hike</strong></p>
<p><i></i>
<p>I love to hike and if there was ever a hike in the Bible that I would have loved to taken, it would have been this walk to Emmaus. Although the scene starts out on a discouraging note, there is a great ending! This story shows us two of Jesus&#8217; followers who thought that Jesus’ career and message had been defeated and discredited. They were fearful and their hopes were dashed…the Jesus they knew and followed had died on the cross.
<p><i>“And behold, two of them were going that very day to a village named Emmaus, which was about seven miles from Jerusalem. And they were talking with each other about all these things that had taken place. While they were talking and discussing, Jesus Himself approached and began traveling with them. But their eyes were prevented from recognizing Him. And He said to them, ‘What are these words that you are exchanging with one another as you are walking?’ And they stood still, looking sad.” Luke 24:13-17</i>
<p>These two men missed, like most everyone else, the message that Jesus was trying to communicate while He was here on this earth. They had preconceived ideas about who the Messiah was to be and what He was to do. They thought that He would come as a conquering king who would deliver Israel from the domination of the Roman Empire. However, Jesus death on the cross appeared to be the end of their hope.

<p>As these men were walking a stranger joins them and walks with them. When He leaves them, they are changed forever. Jesus appeared as a stranger, a fellow-traveler along the road, and asked what they were talking about, and why they looked so sad? They shared the reasons for their distress. Jesus answered, <i>“O foolish men and slow of heart to believe in all that the prophets have spoken! Was it not necessary for the Christ to suffer these things and to enter into His glory?” </i>Then He began to lead them in the mother of all Bible studies, beginning with Moses, and explained all the Scriptures. As soon as they recognized Him as Jesus, He vanished from their eyes. I love this verse that was recorded as they saw clearly, <i>“Were not our hearts burning within us while He was speaking to us…” (Luke 24:32) </i>
<p><i></i>
<p>Jesus’ message drove all discouragement and doubt from their minds! Their heavy hearts were set ablaze. As Jesus walked and talked with them, God lit a fire of understanding in their minds! They were so pumped that they rushed back up to Jerusalem to tell their friends about this stranger. So the long discouraging walk to Emmaus now became a joyous run to Jerusalem with renewed strength and encouragement.

<p>There are times I have to ask forgiveness for my unbelief and spiritual dullness. Sometimes I have taken so long to grasp what is so clearly explained in God’s Word. Sometimes my pride has prevented me from believing His promises. And sometimes it is my own unwillingness to read and value the truths in the Bible. Today’s text is such an encouragement as I can read about a journey from despair to faith…a heavy heart to exuberant joy!</p>
