I am all about salads that you can serve as a complete meal. This may not satisfy a hungry lumberjack, but this salad is loaded with nutritional vegetables, complete with a protein kick of edamame beans all washed in a light creamy peanut dressing. The pallet of colors in this salad entices even the picky eater to indulge and the crunchy peanuts top it off!
These are the dressing ingredients…
For the Dressing
¼ c. honey
¼ c. grapeseed oil (or oil of choice)
¼ c. rice vinegar
1 T. soy sauce
1 t. Asian sesame oil
1 T. creamy peanut butter
½ t. salt
1 T. minced fresh ginger
1 large garlic clove, minced
Combine all ingredients in medium bowl. Stir until peanut butter is dissolved. Set aside.

Toss all together and serve!

For the Slaw
4 c. sliced cabbage
2 c. shredded carrots
1 red pepper, thinly sliced into bite size pieces
1-2 c. pre-cooked, shelled edamame
4-5 green onions finely chopped
½ c. chopped salted peanuts (you can also leave them whole)
½ c. loosely packed chopped fresh cilantro
Make the dressing by combining all ingredients in medium bowl. Stir until peanut butter is dissolved. Set aside. Combine all of the slaw ingredients in a large bowl. Add dressing and toss well. Let sit at least 10 minutes so vegetables have a chance to soak up the dressing. Serve cold.

Chris, Thanks for your comment! Haven’t had much time to cook lately, my father who had been in failing health passed away yesterday. Praise the Lord he has won the victory…in the presence of his Lord Jesus Christ.
