When I was a youngster at home, my dad made us kids a killer fried egg sandwich! It was usually on evenings that mom was gone to a bridal shower. That is the only girl’s night out that I remember my mother ever having! However, us kids didn’t mind because my dad made it a fun event! Of course, our egg sandwich was fried in bacon grease and sandwiched between two pieces of Wonder white bread!
The other evening, I was home alone and chose to relive my childhood with this super simple supper…
I grated some organic sharp cheddar cheese over the egg after I flipped it over. (you will notice that organic cheddar cheese is white!)
I snipped some fresh chives over it before indulging…
