We love breakfast for dinner! Our morning breakfast’s usually consist of our Green Monsters or my homemade granola with yogurt, but once in awhile we miss the big country breakfasts of our youth! When I saw this recipe for turkey apple sausage I knew it was time for a breakfast dinner. Most breakfast meats are high in nitrites and saturated fats, but this recipe calls for ground turkey breast, which is clean and lean!
Along with the ground turkey, the recipe called for onion, garlic, apple, paprika, fennel seed, fresh parsley and thyme and salt and cayenne pepper.
Toast fennel seed in hot skillet with 1 T. olive oil for one minute, stirring to prevent burning.
Add chopped onions and sauté for three minutes or until tender.
Add garlic, paprika, salt and cayenne pepper and cook for one minute longer.
Cool this mixture.
In a mixing bowl add turkey, herbs, shredded apple and cooled onion mixture.
Gently mix together and form into patties. Place in non-stick skillet with 1 T. olive oil and cook for 5-6 minutes per side or until nicely browned and cooked through.
I served these sausage patties with fresh eggs from my CSA basket! The eggs were huge and one even surprised me with two big yolks! I scrambled the eggs with some roasted red peppers and fresh chives. Notice the deep rich yellow color of these farm fresh free range eggs! Thank-you to Growing In Grace Farms!!

I will never again buy pork sausage…this had amazing and authentic sausage flavor! The shredded apple added just the right touch of sweetness. I am totally embarrassed to admit that between my honey and I (mostly him) we ate every patty. (yes, at one sitting…)
