Chia Chocolate Pudding

This healthy dessert will take less than two minutes to prepare. This recipe reminds my of one of my childhood comfort foods, tapioca pudding. My mother’s signature dessert was and still is, tapioca pudding! Today’s recipe can be made dairy free by substituting either almonds, rice or soy milk. I used non-fat milk but have also made this using chocolate almond milk, then omitting the cocoa powder and agave syrup.

In glass bowl whisk together 1 c. milk of choice, 2 T. cocoa powder, 2 T. agave, 10 drops of vanilla creme stevia, 1/3 c. chia seeds. If you don’t have the stevia, add 1/2 t. vanilla and another tablespoon of agave. Place in fridge and stir several times…it is thickened and ready to eat in 30 minutes!

Serve with a dollop of stevia sweetened Greek yogurt and topped with grated dark chocolate. Optional additions would be chopped nuts, sliced bananas, mini-chocolate chips of a pinch of cinnamon.

Chia Chocolate Pudding

1 c. milk of choice
1/3 c. chia seeds
2 T. cocoa powder
1 T. agave
10 drops of vanilla creme stevia

Whisk together and refrigerate for 30 minutes, stirring several times. Serve with a dollop of stevia sweetened Greek yogurt and grated dark chocolate. Optional additions would be chopped nuts, sliced bananas, mini-chocolate chips of a pinch of cinnamon.
