Rhubarb three days in a row! We prefer to eat seasonally when at all possible and since there is a small window of opportunity for fresh rhubarb, we are taking every advantage possible to enjoy this fantastic food! This recipe is easy and quick, with just a few simple ingredients…rhubarb, strawberries, honey, stevia and a orange. This sauce is more than sufficient for a dessert, but if desired you can also serve this sauce warm over vanilla ice-cream for an over-the-top dessert!
Wash, trim and chop 2c. rhubarb & 1 c. strawberries.
Place in non-reactive saucepan along with the juice and pulp of one orange and 1/4 c. honey. Bring to boil, stirring constantly. Reduce heat and continue cooking on simmer, stirring frequently until tender, 8-10 minutes. Remove from heat and stir in 10 drops of Valencia Orange liquid stevia. Cool and serve.
Strawberry Rhubarb Sauce
2 c. finely chopped rhubarb
1 c. sliced strawberries
juice and pulp of one orange
1/4-1/3 c. honey, depending on tartness
10 drops of Valencia Orange liquid stevia
Place fruit and honey in a non-reactive sauce pan. Bring to boil, stirring constantly. Reduce heat to simmer and continue cooking, stirring frequently for 8-10 minutes or until tender. Remove from heat and stir in stevia. Cool and serve.


No Jell-O! =) We used to eat our strawberry-rhubarb sauce on pancakes ~ it’s been a long time since I’ve made it. Might have to try it with honey!
