We often think of crepes as a rich decadent dessert, but today’s recipe will show you that this is a balanced nutritious meal with protein and healthy carbs! The crepes are made from oats, eggs, salt and almond milk…how easy is that? You can be creative with the fruit filling, but since I had fresh strawberries and mangos that were ripe, that was my choice today. The creamy Greek yogurt filling made it seem sinfully indulgent, but hey, it is zero fat and only sweetened with a little orange flavored stevia!
I doubled the recipe so I could have extra crepes on hand. (2 c. oat flour, 2 c. almond milk, 1/2 t. salt and 4 eggs) They keep for several days in your fridge.
I love the SweetLeaf brand of liquid stevia. I have gotten several flavors, but use the orange and vanilla creme the most. I used about 6 drops in 1 c. of plain Greek yogurt.
When I can purchase mangoes that are reasonably priced, I pick up three or four. We use them in place of peaches.
Warm your pan to medium hot and add 1 tsp oil. Poor 2/3 of the size of crepe you want in the pan and lean from side to side so it spreads out to a thin even crepe. When firm and cooked on bottom, flip. Cook and flip until reaches desired golden color.
As you can see, these are paper thin, but they flipped good and didn’t rip. Spread yogurt over crepe and place fruit of choice in middle.
Sprinkle cinnamon over top and roll up! Garnish with a dollop of Greek yogurt and fruit. Dust with powdered sugar and cinnamon if desired. I served these with ham-roll-ups.
Oat Crepes
1 cup oat flour (grind up oats in food processor or blender)
2 organic eggs
1 cup milk (any kind is fine: almond, soy, cows)
1/3 tsp salt
Stevia (if desired, to taste) I used about 6 drops of vanilla creme.
1 T. vanilla
Mix well and let sit for a few minutes. Warm your pan and add 1 tsp oil. Poor 2/3 of the size of crepe you want in the pan and lean from side to side so it spreads out to a thin even crepe. When firm and cooked on bottom, flip. Cook and flip until reaches desired golden color. Enjoy as a breakfast or a dessert. Top with your choice of options. Maple syrup, honey, fruit, peanut butter, yogurt, etc.
