Our local HyVee store was giving taste samples of this smoked chicken. I immediately fell in love with it and purchased a container! They smoke their own meat and sell it either pulled off the bone, or as an entire chicken or pork loin. This is about one pound and it provided two meals for my honey and I. I highly recommend it.
I pulled out all the fresh colorful veggies out of my fridge and got to work…(Thanks to my friend Kendra, who brought me a box of this beautiful fresh artisan lettuce!)

Many time you see shredded cheese added to a taco salad, but I omitted it. Do you know what? The light colored shredded carrots looked identical to shredded cheese, you could fool most people on this one!
We each ate two huge bowlfuls! The smoked chicken added a fantastic taste and then of course cilantro makes any salad a winner!
If I would have added anything more, it would have been diced avocados. Mmmm!
