Almond Butter

We all know that peanut butter is an American staple, but recently almond butter as emerged as a healthier alternative. Almonds are high in protein and calcium as well as being  high in monounsaturated fat which is know to reduce your risk of heart disease. Almonds and almond butter are also rich in vitamin E as well as a good source of antioxidants. Almond butter is more expensive than peanut butter, but when you make your own you can recoup some of that cost!

I purchased roasted and salted almonds. I dumped them in my food processor and started processing.

This batch took about 10 minutes of processing until it was smooth. I added a tablespoon or two of olive oil to make it a little creamier. I also added at this time about 2 T. of raw honey. I continued to process until the oil and honey was well mixed in.

Transfer to a glass container and keep refrigerated.

This is wonderful on sprouted grain English muffins for a quick breakfast!

I use almond butter just like I do peanut butter…for sandwiches, fill celery boats, crackers, a dollop in smoothies or oatmeal, cookies, pancakes, on top of sliced bananas or just a spoonful for a quick pick-me-up!

    Store bought almond butter is so great now and much easier but thanks for the recipe. I prefer Barney Butter, the crunchy is to die for!!

  2. Adding honey to this sounds wonderful. I buy almonds at Costco and always have a huge bag so I plan to try this.
