Tonight I was scrambling for a lo-carb side dish. When I opened my fridge a box of mushrooms catapulted on the floor, so that was a sign…Roasted Mushrooms, and I know my honey loves them.
I had a box of Shitake and a box of Baby Bellas. It looks like a lot of food for two people, but trust me, they shrink dramatically.
I am always in a quandary whether to wash mushrooms or not wash them. I know that they absorb water like a sponge, but then in my mind I am picturing who all handled them when they were packaged, and how clean were their hands or did they sneeze on them. So, of course, I ran them under cold water and drained them well. Whew…feeling much better! I broke off the stems and saved them for another recipe, and cut the mushrooms in half. I drizzled with 2 T. olive oil, 2 garlic cloves minced, salt, freshly ground pepper and 1/4 c. white wine. Place in 375 oven for 25-30 minutes, tossing several times.
Remove from oven and serve! See how they shrink?
I served them with Sesame Chicken Strips, Mashed Faux-tatoes and steamed peas.
