Carne asada is grilled beef that is thinly sliced and served in flour tortillas. Rice and or beans is usually served aside it. Although almost any cut of beef can be used for the carne asada, typically it is made from flank or skirt steak. It can be grilled just with salt and pepper for flavorings, or it can be marinated. We prepared this meal for the boys at the Timothy House orphanage in Mexico. Preparing food for 20-25 people is no small feat. We were chopping for a long time!

Shredded cabbage is used instead of lettuce.
Guacamole is made by blending avocados with water and seasonings. It is thinner and smoother than our guacamole in the States. It was in great demand by all the boys! We thought we had made plenty, but near the end their were swiping their tortillas to clean the bowl!
Beans were made with onions, chorizo, chilies and spices. They were fantastico!
Once the prayer for the blessing is said, there is a mad flurry of activity through the food line! It is not every day they feast on such sumptuous fare!
Me-o-my-o….A five star restaurant couldn’t boast as good as food as we dined on that night in a dusty little rural town in northern Mexico!


I have been craving Mexican food lately. I grew up in AZ where a great carne asada taco was always awaiting right around the corner. Now I live in NYC where tacos are few and far between – never mind them being any good. Those look fabulous and are making my mouth water. Thanks for sharing.
