Quick Quesadillas

I am all about quick meals, not fast food, but something I can prepare at home with minimum time and effort and still have it be nutritious. The quesadillas that I am featuring today, take about 10 minutes from start to finish. These can be tweaked to include or omit ingredients that your family prefers. I did not add meat, but chose to use refried beans for my protein source.

Spray each side of a tortilla with cooking oil. Place on hot griddle and brown on both sides.

Spread with refried beans, lo-fat mexi-blend cheese and pico de gallo or any chunky salsa. I drain as much liquid from the salsa as possible so they quesadilla doesn’t get soggy. I spread the top tortilla with the beans and place it on top of the salsa and cheese layer. The reason I do this is because the refried beans are very thick and hard to spread when the tortilla is in the pan.

Brown on both sides and remove from heat. Make sure the cheese is melted. Cut with pizza cutter into wedges and serve with guacamole.

Garnish with fresh cilantro and serve with additional salsa if desired.

I prefer a crunchy quesadilla, but if you prefer a soft one, eliminate the first browning session.
