Chicken Nachos & Coconut Mango Smoothie

When the Tom Cat’s away, the mousie plays! Yes, I have been a mouse these past few days and my cooking has taken to the back burner.  I hauled out my rubber stamping supplies and as I created  cards the mess seemed to grow and multiply.  I couldn’t cook because there was literally no room on my counters or table to prepare food.

I had stashed a rotisserie chicken in the fridge, knowing I had the goodies for nachos!

Nacho cheese layered with refried black beans, shredded chicken, Mexican blend low-fat cheese, chunky salsa, chopped green onions, cilantro and guacamole. Zap in microwave until cheese is melted. Serve with additional salsa and guacamole.

Here are the ingredients for my coconut mango smoothie…

I love mangos, but I cheated and bought a bag of frozen mango chunks. It works best to have some frozen fruit for your smoothies, so you don’t need to add ice. This coconut nectar is naturally sweetened with white apple juice. The little containers of pineapple are handy, because you don’t need to open a big can or slice and prepare a fresh one. Hey, on these play days,  I cut culinary corners!

Every winter I try to set aside several days to make cards for the entire year.

Now to get everything whisked away and cleaned up… the Tom Cat returns tomorrow! YEAH!

  1. Those cards look awesome!!! Reminds me of when I took on the huge task of creating our own wedding invitations. It was so time-consuming, but they looked so much better than any others we saw!
