Nutritious Chocolate Chip Cookies…Honestly!

After diligently following a no-refined sugar regime, I have started to crave a simple chocolate chip cookie. After all, I am a grandmother of seven and grandmothers serve chocolate chip cookies, right? I found some grain-sweetened chocolate chips this week and on the back of the package was a recipe for cookies.

The ingredients list consisted of…whole grain malted barley and corn, unsweetened chocolate, cocoa butter, soy lecithin and vanilla. You can order these online if you cannot find them in your supermarket. www.sunspire.com All other chocolate chips in the store are loaded with refined sugar.

I also tried a new unrefined sweetener, brown rice syrup. This natural grain sweetener is more nutritious than it’s highly processed counterparts, such as corn syrup. Not only do natural grain sweeteners contain protein, vitamins and minerals, but they also retain many beneficial whole grain components such as phytochemicals and some soluble fiber.

The remaining ingredients in these cookies are whole wheat flour, wheat germ, light olive oil, chopped pecans, eggs and vanilla. I was perplexed that the recipe did not include any salt or leavening, so I added 1/2 t.salt and 1 t. baking powder.

Mix 2 eggs, 1/4 c. oil, 1/2 c. brown rice syrup and vanilla together.

Stir in nuts, flour, wheat germ, baking powder, salt and chocolate chips.

Place spoonfuls of dough on Silpat lined cookie sheet.

Bake at 350 degrees for 10-12 minutes. Remove from pan and cool on wire rack. It is a rule that one must eat at least three warm cookies right out of the oven with a glass of cold milk.

This cookie has a hearty feel to it. Although it is not as sweet as the traditional chocolate chip cookie, it is a perfect substitution! You will not need to feel guilty about indulging in these treats! Grandma’s cookie tradition will live on!

Healthy Chocolate Chip Cookies

1/4 c. light olive oil
1/2 c. brown rice syrup
2 eggs
2 t. vanilla
1/2 t. salt
1 t. baking powder
1/2 c. chopped pecans
1 c. whole wheat flour
1 c. wheat germ
1 c. grain-sweetened dark chocolate chips

Mix liquid ingredients. Stir in rest of dry ingredients. Combine well. Drop by teaspoons onto a prepared baking sheet. Bake at 350 for 10-12 minutes or until golden brown color. Remove from heat. Cool on wire rack.
