I am still keeping with my “anti” refined sugar campaign. After several weeks of no sugar, I dipped one of my honey’s French Fries into a dab of catsup and… wow! It tasted like pure sugar! Amazing how our taste buds acclimate in time. I have not felt deprived but have enjoyed the natural sweetness of crisp apples, oranges, pomegranate seeds, bananas and a plethora of unsweetened frozen fruits.
Today’s recipe is a great snack for that “on the go” quick pick-me –up fix! It is out of the Gourmet Nutrition cookbook. These bars are high in protein with good fiber and healthy fats! Apples and cinnamon always make a good pairing as seen in the classic All American apple pie. I cut these into small 1×2” pieces and wrapped them individually. This makes it easy to throw a couple in my purse when I need that extra fuel.
The ingredient list is organic applesauce, oatmeal, cinnamon, apples, egg whites, salt, vanilla protein powder and nut meal. (not pictured) Nut meal is made by grinding nuts in your blender, or using prepackaged almond meal.
Mix egg whites with the applesauce.
Add protein, cinnamon, oats, salt and nut meal. Stir until incorporated then fold in apple pieces.
Transfer mixture into sprayed 9×9” pan. Bake at 350 for 15 minutes or until done.
Cool, cut into small pieces and wrap individually. Store in fridge or freezer.
Apple-Cinnamon Bars
2 egg whites
1/2 c. unsweetened applesauce
Vanilla protein (equal to 150 gms) approx. 6 scoops
1/2 t. cinnamon
1/4 t. salt
1/2 c. oats
2 c. nut meal
1/2 c. apple, cubed
Mix egg whites with applesauce. Add protein, cinnamon, salt, oats and nut meal. Mix well; fold in apple pieces. Transfer to sprayed 9×9 baking pan. Bake 15 minutes at 350, or until done. Cool and cut into small pieces and wrap individually. Store in fridge or freezer.
The one change I would make is to cut my apple pieces smaller. These are very tasty, and you only need a small piece to feel satisfied. You could also substitute pears for a variety.

I think you could try regular eggs or a flax or chia egg. That is when you soak these seeds in water until it become gelatinous. Google that for further instructions, I haven’t done it myself.
