Festive Omelet

We seldom eat eggs for breakfast, but there are occasions when we skip our granola, fruit and yogurt and opt for a later brunch. Since we both had to fast for our cholesterol tests this morning, we were not able to eat until after 10am. By then, we were craving a meatier fare! This omelet totally fit into the Christmas theme with the bright red and green colors!

Begin by sautéing 1/2 red bell pepper and 1/2 c. baby bella mushrooms. (These are baby portabellas)

When tender, add a handful of chopped spinach and stir until wilted. Chop 1/2 c. Canadian bacon and set aside.

For the two of us, I use three whole eggs and 1/3 c. egg whites (Better’n Eggs) plus 1/4 c. cottage cheese. This keeps your omelet moist with a bit of creaminess. Whisk eggs and cottage cheese together and add to veggie mixture, along with Canadian bacon. Stir over low heat and when eggs begin to congeal, add 2 T. shredded cheddar cheese. Continue cooking for another minute.

When I was growing up, my mother served applesauce and cottage cheese at every meal. I have vivid memories of sitting at our table just ready to eat, when mom would say, “Jane, get the applesauce and cottage cheese from the refrigerator.” It was repeated on a daily basis. I am not sure why we waited until everyone was sat down, to bring them to the table! However, I am so very thankful that we sat as a family around our kitchen table on a daily basis! I fiercely clung to that tradition as our children were growing up and it warms my heart to see them continuing this practice in their homes.

We are devouring fresh pomegranates seeds on a daily basis. Our local Walmart has huge fresh pomegranates for $1.50 each. That may seem expensive, but each fruit contains hundreds of sparkling nutritious arils inside! I noticed there are little pamphlets beside them showing how to remove the arils!

A hearty brunch like this will keep you going strong until dinner! Don’t underestimate the nutritional value of a veggie loaded omelet. Especially at this busy time of the year, it can be prepared quickly with minimal dirty dishes!
