Mustard & Brown Sugar Glazed Salmon

Salmon has become an immensely popular fish in our healthy living culture today.  This is in large part due to it being high in essential omega-3 fatty acids.  So what does “essential mean”? It means, omega-3 fatty acids are necessary to our survival because it cannot be manufactured by our bodies and it must be obtained from food sources. One of these food sources is salmon. Populations that eat a regular diet of this type of fish, have a lower incidence of heart disease. It could also be labeled a brain food, as research shows it improves cognitive thinking. This is a simple yet delicious way to prepare and serve salmon…just three ingredients, plus salt and pepper! Salmon, mustard and brown sugar.


Make a paste of equal amounts of mustard and brown sugar. Spread over each salmon steak and place in shallow baking dish that has 1/4 c. water in the bottom. I took a cooking class once on salmon preparation and they always suggest poaching salmon to keep it moist. Season with salt and freshly ground pepper.


Bake at 350 for 25-30 minutes.

I like to garnish with a few micro greens to add some interest on the plate.


Tonight, we ate healthy…maybe it is all those rich holiday treats and sweets that made us crave something good for us!
