Coziness during a blizzard=cranberry walnut tea bread with a spot of Mighty Leaf Tea. Yep, a blizzard today in the Heartland! Church services were cancelled so my honey and I worshipped at Bedside Baptist Church…in my jammies, no less! I addressed my Christmas cards then topped off the afternoon with a cup of Cozy Chamomile Citrus Mighty Leaf Tea and a few slices of cranberry walnut bread!
My mother baked cranberry bread every Christmas and would give little loaves as gifts. Her holiday baking days are over, so I have taken over this tradition! This bread freezes very well. I love the orange flavor that permeates each bite of this festive looking tea bread!
Begin with flour, sugar, salt, orange juice, eggs, orange zest, butter, water, soda, cranberries and walnuts.
Whisk together flour, salt, sugar and soda. Set aside. Melt 4 T. butter and add 4 T. hot water. Add 1 c. orange juice and 2 eggs. Beat well. Chop 1 bag of fresh cranberries coarsely in food processor.
Fold all these ingredients together and place in loaf pans. I made 3 little loaves and one large one.
Bake in 350 oven, small loaves for 20 minutes and large loaf for one hour. Test with toothpick to make certain the center of each loaf is done. Cool on cooling rack.
Curl up and sip some tea while indulging in a few slices of this wonderful bread!!
Cranberry Walnut Tea Bread
4 c. flour
1 t. salt
1 3/4 c. sugar
1 c. orange juice
zest from one orange
3 eggs, well beaten
4 T. melted butter
4 T. hot water
3 t. soda
1 bag fresh cranberries, chopped coarsely
1 c. chopped walnuts
Whisk together dry ingredients. Mix orange juice, water, melted butter and eggs. Add to dry mixture along with cranberries and nuts. Fold in all dry ingredients. Place in loaf pans and bake in 350 oven. Small pans-20-25 minutes, large pans-55-60 minutes. Cool on rack before slicing.
