I chose a recipe out of this cookbook today called Snowballs! This is quite fitting as I look out the window of our tiny apartment and see wisps of snowflakes coming down! (not enough for snowballs, thank goodness!!) This recipe is a very healthy alternative to the traditional Christmas baking that is often laden with sugar and fat.
This recipe called for almond butter, but I chose to make my own almond/peanut butter.

Since the peanuts were salt-free I added about 1 t. of salt. In the food processor it only takes a few minutes from nuts to butter! The first minute looks like this…
The next minute it starts to clump a little…
In about 5 minute it looks like this…ready to eat!
This was the recipe from the book…
I then added honey (not pictured), cocoa powder (didn’t have carob powder), cinnamon, nutmeg and salt.
Process until well blended.
Transfer to bowl, spoon coconut into a bowl, and another bowl for chopped nuts (opt.) I ground a mixture of almonds, cashews and pistachios.
Form cocoa mixture into ball and roll into nuts and coconut.
These are high-protein goodies, with a healthy crunch factor! These are not light, airy or fluffy! One or two will totally satisfy your sweet tooth and chocolate craving!

Mmmm, those do look good ~ and healthy! I haven’t tried making peanut butter yet ~ need to do that too.
Hubby has binged on sweets the last few weeks. He has been on a low carb, no sweets, portion control diet for over a year now. He lost about 70 pounds. This cookbook would be perfect. Thanks for the offer.
