Fresh cranberries have a limited window at our supermarket…time to purchase them is NOW! I found bags of fresh cranberries at Aldi’s today for $.89! They freeze wonderfully, so I grabbed some extra and tossed them in my freezer. For years I stayed away from cranberries for it seemed the cranberry sauce I had tasted was bitter and tasteless. However, I have since discovered that you can have fresh, preservative-free homemade cranberry sauce in less than 15 minute that is delicious! It’s perfect with chicken, turkey, Christmas, Thanksgiving and the winter months! The bright color livens up any dinner table and it’s loaded with vitamin C and fiber.
Wash and drain one bag of fresh cranberries. Place in saucepan with 1 t. grated orange rind, 1/2 c. orange juice and 3/4 c. sugar.
Peel and remove sections of one orange.
Bring cranberry mixture to boil and cook 10 minutes or until cranberries pop, stirring continually. Remove from heat and add chopped orange segments. Chill until time to serve.
Grate fresh orange zest over bowl before serving. I totally forgot to photograph my final dish…but I did find a similar look online!
Cranberry Orange Sauce
1 bag fresh cranberries
1/2 c. orange juice
3/4 c. sugar
1 t. orange zest
Sections of one orange, chopped into 1/2” pieces.
Bring to boil and cook for 10 minutes or until cranberries pop. Remove from heat. Add fresh orange pieces and stir. Chill until ready to serve. Sprinkle fresh orange zest over cranberries for garnish. I have also added 1/2 c. crushed pineapple and/or chopped apples and/or chopped roasted walnuts.
