My honey can’t quit talking about these! He likes to eat a low-carb diet, but he desperately misses his potatoes. When he tasted these faux-tatoes, his low-carb world was complete! Between the two of us, we wolfed down an entire head of cauliflower, because we couldn’t stop eating this! This recipe is low in carbs and high in nutrients and makes the perfect stand-in for mashed potatoes.

Begin by washing a head of cauliflower and breaking into florets.
Salt and steam until tender.
In food processor, blend cauliflower, butter and freshly ground pepper until smooth.
Garnish with fresh chopped chives.
Does that look like a bowl of steaming hot mashed potatoes? I honestly could have fooled my honey, had I not spilled the beans. These are fantastic! You could also add some garlic or parmesan cheese for a twist.
Mashed Faux-tatoes
1 med. head cauliflower, broke into florets
1/2 c. butter (I used less)
1/2 t. salt
Freshly ground pepper.
Minced chives
Steam cauliflower until tender. In food processor, blend cauliflower, butter, salt and pepper, until smooth. Top with fresh chopped chives.
