Call it casserole, one-pot wonder or simple hot dish…today’s recipe fit’s each name! It could be called Mexican Lasagna too! These one pot dishes are easy to make, easy to bake, and delicious to eat. They feed a lot of people and make wonderful leftovers. You’ll be surprised at how many people you can feed with one recipe. Best of all, you can even make them ahead of time!
Begin by browning one pound of lean ground beef.
Gather your ingredients of corn tortillas, cooked brown rice (I make large batches then freeze them in smaller zipper bags) taco seasoning, refried black beans, lite sour cream, salsa, cheddar cheese and guacamole. (fresh cilantro and tomato juice not pictured)
Spoon 1/2 c. salsa over bottom of baking dish. Lay corn tortillas on top of this. I tear some in pieces to cover entire pan.
Spoon refried black beans over tortillas.
Drain cooked ground beef. Add 1/2 envelope of taco seasoning and 1/4 c. water, simmer for 5 minutes. Spoon 1/2 of beef mixture over beans.
Spread 1/2 c. sour cream over beef and sprinkle 1/2 c. sharp cheddar cheese over this. Add another layer of corn tortillas.
Spoon 1 c. cooked brown rice over tortillas.
Spoon rest of ground beef mixture over rice and add 1 1/2 c. salsa and 1/2 c. sour cream. Pour 1 c. tomato juice over all and finish with 1/2 c. cheddar cheese.
Bake in 350 oven for 35-40 minutes, or until bubbly around the edges. Serve with guacamole and topped with fresh chopped cilantro.
This made several meals not only for us but also for my elderly parents! This would also be good with crushed tortilla chips, shredded lettuce and chopped tomatoes over the top.

1# lean ground beef, browned and drained
1/2 package taco seasoning
corn tortillas
1 can refried black beans
1 c. cooked brown rice
2 c. salsa
1 c. lite sour cream
1 c. tomato juice
1 c. sharp cheddar cheese, finely shredded
Wholly guacamole
Fresh chopped cilantro
Spoon 1/2 c. salsa over bottom of baking dish. Lay corn tortillas to cover entire bottom of dish. Spoon refried beans over tortillas. Add 1/2 envelope of taco seasoning and 1/4 c. water to cooked and drained beef, simmer for 5 minutes. Spoon 1/2 of beef mixture over beans. Spread 1/2 c. sour cream and 1/2 c. cheese over beef mixture. Add another layer of corn tortillas. Top with 1 c. rice. Spoon rest of ground beef mixture over rice and add 1 1/2 c. salsa and 1/2 c. sour cream. Pour 1 c. tomato juice over all and finish with 1/2 c. cheddar cheese. Bake in 350 oven for 35-40 minutes or until hot and bubbly around edges. Serve with guacamole and chopped fresh cilantro. You can also garnish with shredded lettuce, chopped tomatoes and crushed tortillas chips.
