Strawberry Coconut Smoothie

Several mornings a week, I will prepare smoothies for our breakfast. How I prepare them completely depends on what is in my fridge and freezer. In my VitaMix I threw in a half a bag of frozen whole unsweetened strawberries, one scoop (14 gms.) of protein powder and enough coconut milk for the right consistency. I don’t like to eat my smoothies with a spoon so I make them fairly thin. I also added about 5 drops of liquid stevia and garnished with unsweetened coconut flakes and fresh pomegranate seeds.  (I guess that makes 6 ingredients, sorry!)

The color was invigorating and the taste was refreshing!

    Thanks for reminding me about Spirutein protein shakes. I used to have them all the time, but fell out of the habit. Your smoothie looks delish. Is a Vita-Mix a juicer of some sort?

    • VitaMix is the mother of all blenders. I have had mine for about 8 years and use it everyday. I purchased mine at our state fair, but you can also order them online. I think it is better than a juicer because you get all the fiber too. It purees anything!
