Oatmeal with Sweet Potatoes, Almonds and Dried Pomegranate Seeds

As you can see from the title, this is not your grandma’s oatmeal. I doubt if my grandma ever saw a pomegranate seed and probably only cooked sweet potatoes at Thanksgiving! I get bored with the same ole oatmeal in the morning, so today I kicked it up a notch. (or two)

In small sauce pan mix 2/3 c. old-fashioned oatmeal, 2 T. dried pomegranate seeds, 1/2 c. pureed apple sweet potatoes, 1 c. almond milk and 1/2 t. salt. Bring to boil, reduce heat and continue cooking and stirring for about 8 minutes or until thickened.

Add 1/4 t. cinnamon and 1/4 t. nutmeg. Stir well. Transfer to serving bowl and top with dollop of Greek vanilla yogurt and chopped roasted almonds.

I was excited to discover this combination and this will now be my new and improved oatmeal! Think how creative you can be when you consider various dried fruits, nuts and baby food puree! For your toppings, you could use agave, maple syrup, peanut or almond butter or imagine a scoop of vanilla ice cream melting over the top!

    I would’ve never thought to use sweet potatoes in oatmeal. That’s a great idea. I love traditional oatmeals with cinnamon just as I like experimenting with different ingredients. Sometime ago, there was an article in the New York Times about savory oatmeals with peas. Oatmeal is a very versatile ingredient.

    Have you gotten yourself a new macro lens? Nice pictures. I don’t eat cooked oatmeal but this looks like it would also work just to stir into Quick Oats in muesli fashion. Never heard of dried pomegranate seeds. By the way, I ate my daily Greek yogurt with pomegranate seeds Friday and it was fantastic! Thanks for the idea.
