Today’s salad was invented because of a lack of food in my kitchen! I desperately need groceries, but have not taken the time this past week to sit down with an organized meal plan and list. So, here is what I came up with…Mayo, roasted red peppers, dill pickles, chives, parsley, celery, potatoes and dill seasoning.
Boil potatoes with skins on, until tender. Remove from heat and drain water. When cool, peel potatoes. Chop celery, pickles, peppers, dill seasoning and herbs. Add to potatoes and add just enough mayo to hold it all together.
This delicious “lunchable” cost me less than a dollar, and it was loaded with nutrition and flavor! The dill pickles added that unique crunch that I adore!
Dill Potato Salad
3 small red potatoes, cooked and peeled
1/4 c. celery, chopped fine
3 T. chopped roasted red pepper
1/4 c. baby dill pickles, chopped
1 T. dill pickle juice
1 T, chives, chopped
1 T. parsley, chopped
3 T. mayo
1 t. dill seasoning
Mix all together and enjoy!

Yes, it can be made vegan! (I bet Micah will even like this!) I found at HyVee yesterday in the organic section, dill pickles with no added yellow dye!

Since I am cooking for one (myself) at lunch time, it made me think of the one serving lunchables! I probably came across too harsh, but seriously…how hard is it to make lunch for one person?? Thanks for stopping by my blog.
