Apple, Cranberry & Walnut Crunch

Today’s recipe is a seasonal dessert with a magical blend of sweet apples and tart cranberries, topped with a healthy oatmeal, walnut, flax seed topping.

Peel and slice thinly, 5 large apples. Place in baking dish along with 1/2 c. dried cranberries. Top with brown sugar mixed with instant Clearjel powder. I order this powder from www.bakerscatalogue.com  (Anytime I make fruit cobbler I add some of this to the fruit to thicken the juices). Sprinkle with cinnamon and nutmeg and pour 1 c. apple juice over all.

Place in 350 degree oven for 15 minutes, while you prepare the topping. Mix 2 c. regular oatmeal, 3/4 c. chopped walnuts, 2 T. brown sugar, 1/4 c. ground flax seed. Add 3 T. melted butter mixed with 2 T. light olive oil. Stir until well mixed.

Remove apples from oven and top with oatmeal mix.

Return to oven and bake for 30 minutes or until topping begins to turn light brown and apples are bubbly at the edges. Serve warm with scoop of ice cream!

5 large apples, peeled and sliced thin
1/4 c. brown sugar
1 T. instant clearjel powder (could also use minute tapioca)
1 c. apple juice
1 t. cinnamon
1/2 t. nutmeg
1/2 c. dried cranberries
2 c. oatmeal
3/4 c. chopped walnuts
2 T. brown sugar
1/4 c. ground flax seeds
3 T. butter
2 T. light olive oil

Place sliced apples in baking dish. Toss with brown sugar, clearjel powder, cranberries, cinnamon and nutmeg. Pour apple juice over mixture. Place in 350 oven for 15 minutes while you prepare topping.

Topping: Mix oatmeal, walnuts, brown sugar and flax seed. Combine melted butter with olive oil and stir into oatmeal mixture until well blended. Remove apples from oven and top with oatmeal mixture. Return to oven and bake 30 minutes or until topping turns light brown and apples are bubbling around the edges. Serve warm with a scoop of ice cream.
