For over 30 years of our married life, my honey came home for lunch. However, since we moved several years ago, it is not practical for him to drive home in the middle of his work day. I loved our lunches together, however, this new arrangements affords me more freedom in my day as to when I eat or if I am even home over lunch time! I have learned to be creative for lunch’s for one. Here is what I invented today…
Thanks to my stash in the freezer, I pulled out a cube of frozen pesto that I had made earlier this year when the fresh basil was in full force. I also had some loose cooked ground beef that was frozen in a zipper bag. I always have whole wheat pita bread pockets in my freezer and jars of roasted red peppers in my pantry. Although I am trying to stay away from cheese, I find that Parmesan cheese is so rich in flavor that I only need a small amount to satisfy my taste buds.
Spread pesto over two pita bread halves.
Drain a couple roasted peppers on paper towels so they don’t make your pizza soggy. Chop in small pieces and place on pita bread, along with seasoned ground beef and parmesan cheese.
Bake at 375 for 15 minutes. Serve with my favorite fall beverage…Simple Apple Juice! Oohh, it tastes just like my childhood memory of homemade apple cider!


This looks like something I could become addicted to easily. I keep all those things in my kitchen too so it will be easy to try. Thanks Jane.
p.s. Can’t imagine my husband home for lunch. Wait. I’m not home anymore either so I guess we’ll have to wait for retirement to try that one.
