Tonight was Girl Friends Night Out at church. This is the fall kick-off for women’s ministries. We were given an overview of each class offered and a short devotional was given on Walking By Faith. Of course, food is a vital part of women’s ministries! I tried a recipe of a hummus that we ate in Phoenix last week. It was all a guestament since I was just going by taste!
Drain beans and artichokes and place in food processor. Add 1/3 c. tahini, 2 garlic cloves and salt and pepper.
Process mixture, stopping to scrape sides several times. Add 1/3 c. olive oil, juice of one lemon and 1/2 t. grated lemon peel. Puree until smooth.
Top with 1/4 c. chopped red pepper, paprika and feta cheese.
Drizzle 1-2 T. olive oil over top and serve with fresh veggies and pita bread cut into wedges.
Ron was pumped that I brought home a few scrapings…he promptly finished it off.
Lemon Artichoke Hummus
1 can garbanzo beans
1 can cannellini beans
1 can water-packed artichoke hearts
1/3 c. tahini (sesame seed paste)
1/3 c. olive oil
2 garlic cloves
salt & pepper to taste
1/4 c. red onion, chopped
1/4 c. feta cheese, crumbled
paprika
Drain beans and artichokes. Place in food processor with garlic cloves, tahini and salt and pepper. Process, scraping sides several times. Add olive oil and puree until smooth. Place in serving dish and top with chopped red pepper, paprika and feta cheese. Serve with fresh veggies and pita bread wedges.

This sounds mediterranean, and something we would eat. Thank you for sharing! We love hummus and it almost daily. I had started making it years ago and stopped. maybe i need to make it again.
