This is our last day of vacation here in Phoenix. It has truly been a time of R&R, but I am always ready to return home to Iowa. Why?? Because that is “home”. That is where our grandkiddies come running up with big hugs for grandma, that is where our families are…that is where our friends are. That is where our history is! Home is best!
We had a beautiful time of worship today at Scottsdale Bible Church. www.scottsdalebible.com When we spend time here in Phoenix that where we attend church. The messages are always biblical, relevant and inspiring! Even though we are miles from home we are always at home with the family of God.
I cleaned out the fridge and fixed lunch at the same time. There was enough turkey, greens and veggies for a salad. There were four eggs that needed used up, so I boiled them and made Dill Deviled Eggs. A handful of strawberries sliced over yogurt with toasted almonds was the final touch.
Several years ago I discovered a bottled salad dressing that is fantastic! Even though I prefer making my own dressings, there are times when it is just plain easier to open a bottle. Every time I have served this to guests, they rave about it. It is a slightly sweet vinaigrette with just the right amount of seasoning. No one believes me when I tell them it is out of a bottle. Dill Deviled Eggs
4 hard cooked eggs
2 T. Greek yogurt
1 t. finely minced red onion’
1 T. finely chopped red bell pepper
1/2 t. dill weed
Slice eggs in half and remove yolk. Cut a small part of the bottom of each half so they stand up on a plate. (other wise they are rolling around making a real mess) Take those bottoms and chop finely. Add to rest of ingredients. Spoon into halves and sprinkle with dill or paprika for garnish.


Excellent when you can clean out the frig and come up with something so delicious looking!!
I could never make the leftovers in my fridge this tasty looking! Oh, well, maybe when the kids are gone and the dog dies….Oh, that’s right, we don’t have a dog! Love you, Mums!
