We have all heard this, haven’t we? “Make sure to eat a good breakfast… it is the most important meal of the day!” I agree! From a little girl growing up on an Iowa farm to a grandma now living in a city, I look forward to my morning meal. My dad loved to cook and he would wake us kids up with his cheery voice, “Great day to be alive, come down for breakfast!” We would groggily shuffle to the kitchen table to be greeted by pancakes made in unusual shapes, egg soufflé, hot cereal or a fried egg sandwich, just to name few. Once, in awhile, we were treated to what we considered a milk shake, but in today’s terms, it would be a smoothie!
I refuse to skip this meal. I love breakfast food, however, some of my breakfast food is rather untraditional…like today!

You have heard me say that I am a crunch fanatic so I toast anything I can! Call me picky, but I prefer a light burn on my toast to up the crunch factor. This morning I spread some of my yummy kale humus on my crunchy toasted bagel thin!
A purple monster rounded out this meal to perfection!
Purple Monster
1 c. fresh blueberries
1/2 c. frozen blackberries
1/2 banana
1 frozen acai packet
1 scoop protein powder
juice of one lime
1 T. chia seed
1 T. ground flax seed
almond milk to desired thickness
Put all in VitaMix (blender) and puree. This made enough for Ron and I to even have seconds!


I like having a nice light burn to my toast (and bagels) too! Fun idea to put the lime wedge with the smoothie glass

I just bought bagels. Yumm!
I’m a big smoothie fan (especially for breakfast) – its amazing the amount of goodness you can pack into a smoothie, they are the ultimate fast food! Your skinny bagels are a great idea too.
