Last fall we got a quarter of beef from our friend Jeremy Hess. We shared it with our kids and actually, when we were in Arizona for a few months, they ate most of it! That’s OK though, because we do not eat much red meat. It is some of the most flavorful beef we have ever eaten. I have about two packages left in my freezer and today I thawed out minute steaks. Do you know they are called minute steaks because you sear them on each side for about a minute and they are done! They are thin cuts of beef that have been tenderized. They work real good for a quick meal or even a sandwich!
After searing them in 1 T. hot oil, I removed them from the pan and sautéed green and yellow peppers and one sliced onion. Then I whisked 1T. beef bouillon and 2 T. tomato paste in 1/2 c. water. Add this to the veggies and simmer until liquid is reduced by half. This tomato paste is one of my favorite staples. How many times do you need just a touch of tomato and don’t want to open an entire can? This is perfect, just squeeze out what you need, cap it and store in fridge.
Spoon this over the minute steaks right before serving.
I also steamed a bag of frozen chopped spinach. When it was tender, I stirred in 2 oz. reduced fat cream cheese that had been cut into cubes. This is an easy way to fix creamed spinach. I made extra food tonight so I can take a plate over to my parents. They live just a couple miles away and always appreciate home cooked food. I still had a half dozen ears of sweet corn in the fridge, that I husked and boiled for another side. I was going to fix some potatoes, but totally forgot.
