My tiny kitchen is overflowing with produce and salsa is calling its name. My friend Amanda www.vegacious.com is coming for lunch today and since she is a vegetarian this will fit her fancy just fine. She has been helping me set up my new blog site, so keep coming back for new surprises!
I take the lazy way and chop my tomatoes in my food processor. I realize they are not uniformly chopped, but it sure saves a pile of time and I use a pile of tomatoes. When I make fresh salsa, I usually make about 2-3 quarts. We eat a ton of it and I give some away. I chop my tomatoes first and dump them in a colander to drain. Then I chop my peppers, onions and cilantro in the food processor next. I like to use yellow and orange peppers and of course a jalapeno or two. I blend this with my tomatoes and add the juice of one lime, 1 T. salt, 1 t. sugar, 1/2 t. cumin, 2 T. red wine vinegar and 2 minced garlic cloves. I had some corn and black beans in the refrigerator and added those also. The beans added the needed protein for our lunch.
I had a bag of Soy/Flax seed tortilla chips from Trader Joes that went well with the salsa…and of course we are still consuming large amounts of cherries.
I had purchased this spritzer yesterday at the health food store. Very refreshing!
