All right, you are probably thinking I have fallen off the wagon. Nope…still riding strong! My daughter-in-law Megan introduced me to this super healthy, super quick and super good protein chocolate cake. Stir ingredients in a mug and microwave for one minute. (depending on your microwave, it may need 10-20 seconds more.) This is for those times when your body is craving a chocolate fix, your eyes are glassing over and you are starting to shake. Voila! In 2 minutes from start to finish your addiction is satisfied.
Place 1/2 scoop protein powder in mug. That would be equivalent to 17 grams. (65 calories in my brand which is Life’s Basics Plant Protein) Add 1 T. cocoa powder and 2 Stevia packets. Stir well and add 1 T. pumpkin or applesauce, 1/4 t. baking powder, 1/4 t. vanilla and 3 T. egg whites. Stir well and microwave for one minute. It will rise to above the rim, but settle back down when you remove it from the heat. Immediately take a knife and loosen around all the edges and turn upside down on your plate. You can cut these in half and fill with peanut butter or yogurt. You can also wrap these in saran wrap and take with you for a to-go snack.
A few weeks back I found these gems really cheap and it works perfect for my protein cakes!
Ron had one of these for breakfast too and was totally impressed. Um, can you tell my favorite color is pink?
