Jane’s Granola

Several gals have requested my granola recipe so here goes…

Janes Granola

6 c. old fashioned oats
1/3 c. oil ( I use light olive)
1/2 c. honey or agave nectar
2 t. vanilla
1 t. almond flavoring
3/4 c. sliced almonds
1/2 c. flaked coconut
1/2 c. sunflower seeds
2 T. sesame seeds

In small sauce pan combine wet ingredients and cook over medium heat until well blended. In large bowl, combine dry ingredients. Pour honey mixture over this and stir to coat evenly. Spread out in jelly roll pan and bake at 3oo for 40-45 minutes, stirring every 10 minutes. After cooled, store in refrigerator. Sometimes, I add ground flax seeds and or wheat germ. If you want you can add dried fruits after granola is cooled. Today I didn’t add the coconut, but added dried blueberries. The reason to store in frig is that nuts and seeds have a high oil content and will go rancid unless refrigerated. This is my stand-by breakfast, with vanilla yogurt and fresh fruit!
